昨日は焼き鳥パーティーを開催しました。 日本の伝統的な飲食店のスタイルである「居酒屋(izakaya)」を再現し、実際にお店に出てくるコース料理を振舞いました。 日本の居酒屋の接客や注文の仕方、一般的なコース料理の説明などもしました。 焼き鳥は、来てもらった方々に実際に焼いてもらいました。焼く時はとても熱かったけど、面白い経験ができたとおっしゃってくれました。 パーティーの中でたこ焼きの試食&品評の時間を設けました。 4種類の味を用意して、それぞれの味をその場で5段階に評価してもらいました。 (1.かつおだし味 2.かつおだし+山芋 3.かつおだし+ヌクマム 4.かつおだし+ケチャップ) 自分が感じていた評価と実際にベトナムの方に食べてもらった評価は少し異なり、ベトナムの方からの評価は思っていたものより良かったです。ベトナム人に受ける味や焼き方があり、日本人(特に関西人)が好む味や焼き方は受けない場合もあるのだと感じました。 価格はこちらの想定していたものよりも下回り、見た目と個数、そして味の総合的な判断からの価格設定の見直しが必要だと思いました。 今後も試作と改良を日々重ねていきます。
